Combine pears, sugar, water, and vanilla syrup in a small saucepan over medium heat. Bring to a boil, then reduce to a simmer for 5-8 minutes until the mixture takes on an amber hue and the pears are visibly broken down.
Remove from heat and strain the syrup into a container, using a spoon to press any remaining liquid out of the pear solids.
Use only the strained syrup for the cocktail recipe. (The pear solids make for a great dessert topping!) Let the syrup cool to room temperature before using.
To make your cocktail, start by rimming an 8oz glass with Kawartha Spice Apple or Pear Cider Rim. Then pour your gin and syrup into the glass and stir together. Top with club soda and ice, preferably crushed.
