In a skillet over med-high heat, melt butter. Add chicken and cook undisturbed until the bottoms are cooked, approximately 10 minutes.
Combine stock, lemon juice, and garlic.
Turn over and add ½ c. stock mixture. Add a few slices of lemon to the bottom of the pan. Continue to cook until stock is reduced and chicken is cooked through, approximately 15-20 minutes depending on the thickness of the meat. Add remaining stock if chicken requires longer cook time, and continue until stock is again reduced.
